my buttered chicken
as ryl doesn't have a place to share this it will fit here,
anyways..
500g cubed chicken breast
125g butter
1 tblsp curry powder
2 tblsp turmeric
1/2 tblsp saffron
1 tablsp cinnamon
1 tablsp chinese all spice/ five spice
2 tablsp ground ginger
2 tablsp minced garlic
1 tablsp raw sugar
4 tins of coconut milk
650g of italian tomato sauce or 2 400g tins of crushed tomatos
set your oven to 170c
in a 6 ltre pot put your butter in to melt on a low heat once butter has melted had your spices and sugar
turn the heat up to a med heat then add your chicken
cooked that for about say 5 minutes (you aren't trying to brown the chicken just allowing the it to soak up some of the flavours and butter)
then add your coconut milk and tomato sauce stir till it is all mixed through
then place a lid on your pot throw it in the oven for 2 hours enjoy
