It's basically fruit, sugar and water. You boil the fruit with tonnes of sugar and then add in the water and boil it to about 180*C or something and keep boiling til its thick. Or... something. It was ages since I made it.

it's a bit more than just water, sugar and fruit, cause we have too look at all the sciency stuff behind it, we have to work out the pectin levels of the fruit and decide if we need any extra pectin powder stuff. there also some lemon juice in their somewhere as well *shrug*.
I think i'm doing strawberry jam cause they are in season at the moment so i'll send you some if i have any left. But i'm making scones to go with the jam so i'll probably eat it all

Each year, like clockwork I will collect a ridiculous amount of blackberries, take them home and make huge pots of jam, which no one ever eats.

We used to do that, but mum got bored of no one ever eating it so she stopped making it.

Pectin is like a natural gelling agent in fruits, makes it set when you make jam and stuff. different fruit has different amounts, cirtus fruits have the most which is why you add lemon juice when making jam.
