Yeah I agree that could perhaps be better worded, that is how the forum refers to them by default - though it can be changed.

A child forum isn't specifically a sub forum, a child forum is any forum inside another. Technically General Forums is a forum (just set as a catagory not an active forum) so F and D is a child of General Forums, just as the arcade link is technically a child to F and D.

I will have a think as to how it could be made more clear

so what happens about our join dates and pms from v2?

On the main page there is a form that you can fill out, where you submit links from your old profile on v2 to your new profile on v3 and the mods will edit your join date and post count in your new profile. Your PMs you will have to collect yourself after v2 comes back up tomorrow.
