I personally don't eat chicken but I used to cook it all the time for the kids.
I usually just do the oil and salt and stuff, but if you put your roast veg in the pan with the chicken, ie roast them together, the veg flavours the chicken and vice versa. And it all comes out nice and yummy. Or so I'm told! I was quite well known for my brilliant roast chicken and spag bol. Not together obviously. I do love cooking chicken and meat cause it smells so nice and I used to love it before I went veggie!

I do as Matt - 180 degrees C, for about 1.5 hours depending on the size, with some salt and a little butter rubbed into the skin.
no water, no onions, not for 4.5 hours!!
Just parsnips and sweet spuds in another dish under the chicken (a bit of honey on the parsnips) to roast, with some sweet corn and soya beans with it.
Yum!

*place in microwave for 8minutes.
