I'd say Prisoner of Azkaban... it's my favourite book, too. I love the plot and the character introductions of Sirius and Lupin. I need to re-read the HP books <3

Philosophers Stone - it's so charming. Like, when Harry first visits Diagon Alley, it's just a beautiful scene. I think it's visually a wonderful film. The music is also brilliant.
Half Blood Prince because they managed a really great balance between darkness and humour. Although there weren't enough, the snippets of Voldemort's past shown in the penceive were beautifully done.
Deathly Hallows part two, purely because of the Gringotts scene and the escape on the dragon. That was amazingly done.

I picked the 2 one, the last one I feel to stay relatively true to the book. I loved the Chamber of secrets bit.
