First of all, well done for talking to your counsellor about it. It's not always easy to open up, so I'm really proud of you for doing that.
What I'd suggest is to just write down what comes to mind. It doesn't need to be constructed sentences; words are just as good and you can expand on them later. Another thing is not to force yourself to write, because that can often block anything useful from coming out.
Like Louise suggested, poetry is a good way of letting things out in a creative way, and a journal can track your thoughts and feelings over several days.
