What are acceptable vegan alternatives?

I didn’t know if cheese and eggs was a specific dish that I was unfamiliar with! Got green eggs and ham on the brain clearly.

It really depends on the context. There’s various vegan cheeses that are nice in a toastie or grated on top of pasta but in a sauce nutritional yeast can give a cheesy flavour and cashew butter does something cheesy- texture?

Egg, I never liked eggs as a thing to eat by itself anyway but I know Lio has some ghastly suggestions of substitutions for egg mayo…. As an ingredient it’s just kinda fake news. What would you need eggs for? Like, my brownie recipe doesn’t have eggs or an egg substitute really. There is a powder you can use that you add water to and it replaces egg in a recipe which I used for donuts.

There's an egg substitute called Crack'd which is apparently good for things that really need egg, like yorkshire puddings or omelettes. Tofu is a good replacement for scrambled eggs, and there's a specific type of salt that tastes like egg. In baking you can use things like oil, banana, ground flax or chia to help bind things in the same way as eggs do. I sometimes like to make chickpea flour 'omelettes' but they're not particularly like real omelettes. Aquafaba (the water from cans of chickpeas, cannelini beans etc) is a really good substitute for egg white - you can even make meringue out of it.

Honestly Lana, I was unsure if it was a serious question or if you were joking which is why I did not respond. I'm sorry.

Like the others said - there's decent vegan cheese options out there these days, and eggs on their own are just super weird to me. In baking and cooking there are plenty of substitutions that can be made, and yea you can make something like tofu scramble if you do want an eggy... thing?

Lio, I went to a café on Monday and there were a few vegan options, one of which was egg mayo and I thought of you as I violently ruled it out.

ALSO. T gave me her A+ vegan cookie recipe and I want to try it this weekend. My oven is a bastard (gas oven ). Do I just do a half batch or just go for it and risk having a whole batch of too hard cookies to deal with?
