I really think there's too many details and loose ends that need wrapped up to have it in just one film. And if it was just one film, it would have to be about 5 or 6 hours long to do the books justice.

They've already missed out so much from the books anyway, so there's a lot that doesn't need to be covered. And half the book is pretty pointless anyway, there was simply no need to have so many words dedicated to them wandering about the country. The book was massively disappointing, the film doesn't really have much to work off.

Pretty much what I was going to say. And, because they have missed things out in the others, they'll need more time to tie up the things, that are in important, that haven't been mentioned yet.
The only thing I thought was disappointing about the last book was the epilogue. That was just...ergh.
i don't think 2 films is needed but i think it's cool because it's more screentime / anticipation.
plus, it'll be nice for them to round everything up in a really epic way at the end.
