FWIW the London Dungeon has now moved to the South Bank - and to be fair, you can do the Dungeon experience in York and Edinburgh too, and it's pretty much exactly the same experience wherever you go.
In London (if you come to London) have a look at Londonist or Time Out for tips for what to do - it often covers some of the more interesting and less touristy galleries.
Definitely recommend trying the tube at rush hour, just for the experience, and some proper British pubs with proper British ale. If you can, go to the countryside too - places like Hertfordshire and Kent, as you'll get a totally different feeling for the place. It feels like you should also try Oxford or Cambridge, as they're the 'classics' - punting along the river, drinking Pimms and eating a picnic.
I'd also massively recommend Brighton as a place to visit.
If you're heading north to Scotland, check out York and Leeds on the way; two very contrasting but very British cities, and York is exactly equidistant between London and Edinburgh.
Lake District too is beautiful, as is New Forest, as is Yorkshire Moors.
Scotland, it's worth heading up North north to places like the Isle of Skye and the Highlands - absolutely stunning, and not at all (as I'd been expecting, unfairly!) like The Wicker Man.
