If you want healthy and you've got a bit of time to prepare then you could roast or grill a bunch of vegetables (not so scary as a lot of sandwich fillers) and have them in a sarnie, or with houmus. You said yr just cooking for yrself, so you can cook the veggies say at the start of the week and then they keep for AGES in the fridge and you can have them with different condiments...

If you just want to stick to salads for the time being, have you thought about getting some nice condiments like chutneys and pickles, or mustard or something to make them a bit more interesting?

I am currently:

Cheese and Pickle
Bacon lettuce and tomatoe
chicken with a dribble of mayo
prawn cocktail - prawn in mayo and ketchup
homous on pitta bread with a salad on the side
taramaslata on pitta bread
melted cheese on toast - you can add ham or tomatoes etc.
Mozarella and tomatoe
chicken mozarella and tomatoe
Tuna mayo with cucumber/sweetcorn plain
bread with baked beans on top?
sausage sarnie

and my favourite hundreds and thousands yum!

I am currently:

i love homous, never had it in a sandwich but it's awesome on celery& carrot..
as boring as it seems though, i love just lettuce sandwiches, especially if the bread's toasted:)
