I'm veggie but also staying in a veggie house right now and they love to cook. I'll try to ask tomorrow.
One thing we make a lot are enchilada casseroles (we're lazy). Basically whatever veggies you like, cook them a little, warm corn tortillas, put them in the sauce and then in a baking dish. Make layers with cheese in each, bake for 20 minutes, voila.
I also make vegan posole but then use the leftover ancho chile paste to make the enchilada sauce. I use whatever posole recipe I find online that looks good and just replace the meat with eggplant and zucchini. The broth is made from chiles and I use veggie broth.
We also eat a lot of eggs and soy chorizo with potato and veggies added. I've been craving eggs lately so lots of egg salad as well.
